Snapper Filets

This snapper recipe could not be easier. From the time you carry the snapper in from the car to the time you're sitting down to eat is less than 20 minutes. Your rice will barely have time to cook. The simple preparation allows the sweet, subtle flavor of the snapper to shine through, while giving it a bump from the tomatoes.

           INGREDIENTS

            METHOD

4 snapper fillets

2 tomatoes, peeled and thinly sliced

1⁄2 cup white wine

1⁄2 stick (1/4 cup) butter

1 tsp lemon or lime juice

Seasoned breadcrumbs

Salt and pepper to taste

Parmesan cheese grated

Paprika

 

Preheat oven to 500 F.

Arrange 1 layer of the sliced tomatoes in individual or 1 large baking dish.

Sprinkle each dish with 3 tablespoons seasoned breadcrumbs and season with salt and pepper.

 Overlap small snapper fillets over tomatoes.

In a saucepan, combine wine, butter, and lemon juice. Cook this mixture over low heat until butter is melted. Increase the heat to moderate. Boil the mixture for 1 –2 minutes.

Divide the mixture among the fillets and sprinkle each serving with 2 tablespoons freshly grated Parmesan cheese and paprika to taste.

Bake the fish in oven for 10 minutes.

Yield: 4 servings.
